Since we’ve started working out regularly I have been looking for ways to get more protein in my diet. I can eat all the eggs, chicken, and bacon to get protein but sometimes I just want a pancake. My husband can eat meat all day long, every day, but occasionally I need a break from meat. I need yummy carbs.
These protein pancakes have now become part of my Sunday routine. Every Sunday afternoon I prepare a double batch of these and freeze them for the week. This way I just pop them in the microwave for 1 minute and get have protein pancakes every morning. I love to eat them either topped with fresh fruit and maple syrup or with a little bit peanut butter, bananas, and honey.
Multigrain Protein Pancakes Recipe
½ cup whole oats
½ cup multigrain hot cereal w/ quinoa & flax
1 ripe banana
½ cup egg whites (about 4 egg whites)
4 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 scoop protein powder
