Raspberry Crumb Brownie Bars

Raspberry Crumb Brownies

One of my favorite  dessert combinations is chocolate and raspberry.   I am drooling just thinking about it.  I had a box of brownie mix sitting in my pantry for awhile and I decided to get experimental with it.  I decided to make Raspberry Crumb Brownie Bars.  Sound yummy?  Well they are and super easy! 

First we start with a boxed brownie mix.  Follow the same directions on the box for fudgy brownies, set aside.

Then you get a bowl and 2 sticks of butter

and cream them.

Add flour

and brown sugar

Beat with electric hand mixer at a lower speed until you get little crumbles….like these

Flour your hands and begin to work the mixture with your fingers, creating larger crumbles.

Take 1 3/4 cup of the crumbles and pour them into a 9 x 13 pain lined in parchment paper.

Press the crumbles onto the bottom of the pan, creating a crust.

Toss the crust into the oven for 10 mins.

Meanwhile heat a small pot over a med-high heat and pour in 1/2 a cup of seadless raspberry jam.

Stir constantly until it breaks up and you have a sauce, set aside.

When your crust is done pour brownie mixture into the pan, and spread out evenly.

Sprinkle the left over crubles over the brownie mixture.  You see that bowl in the background,  I plan on licking that bowl.  It is really the only reason why I even decided to make these in the first place.

Take your raspberry sauce and drizzle over the crumbles…….Mmmmmm

Then this is optional, but we love coconut.  Sprinke coconut over the raspberry sauce……yum-E!  Ahhh my pretty!

Put in the oven at 350 degrees for 35-40 minutes, until the your knife comes out almost clean.  It isn’t going to be completly clean because these are fudgy.

When they are done, let them cool and lift them out of the pan by the parchment paper.  Cut into bars and eat!

Now this is the most important part.  It is crucial actually.  While the brownies are in the oven, take the spoon that you used to stir the raspberry sauce and scrap the brownie mixture bowl with it.  Lick the spoon clean!  Trust me if you don’t do this you will regret it.

Awww doesn’t this look just scrumptious.  They officially cannot stay in my home because I will eat them all.  I have no self control.  If you work with Hubby, be sure to bring some milk to work tomorrow because I am sending the leftovers your way.

Here is the final breakdown.

1 box of brownie mix ( you will need eggs, oil & water)
1 cup butter, softened (2 sticks)
2 cups flour
1/2 cup packed light brown sugar
1/4 teaspoon salt
1/2 seedless red raspberry jam
1/4 cup of coconut

Pre-heat oven at 350 degrees.  Line 9 x 13 pan with parchment paper.

Prepare brownie mixture according to the instructions on the box.

Cream 2 sticks of butter, add flower, brown sugar and salt.  Beat at a low speed until combined and crumbly.

Flour your hands and work the crumb mixture with your fingers, pinching it, until you get good size crumbles.

Take 1 3/4 cups of crumbles and place in prepared pan.  Press the crumbles, shaping to the bottom of the pan.

Cook the crumb crust for 10 minutes.

Heat a pot at a medium-high heat, add seedless raspberry jam, stir constantly until it melts and you have a nice sauce, set aside.

Take crust from the oven and pour in brownie mixture.  Sprinkle remaining crumbles over brownie mixture, drizzle raspberry sauce over crumbles and top of with coconut.

Bake in the oven at 350 degrees for 35-40 minutes, until done.

Cut into bars and EAT!

The last time I posted something, I had not even tried this particular recipie yet, but I was so excited as I had already tried two of your recipies. Yea, yea, yea, you made me a food rockstar!!! Everyone went crazy at our choir breakfast of 80 people and musicians! And there are really good bakers down here in the South, but they were still impressed. Thank you so much for making this one up! It was so much fun to make! I’m sharing it with my mom so she can be a food rockstar too! Although she already is. The only thing I would change is the amount of cookie crumble amount you put for pressing in the pan. I put alot more (maybe my pan was bigger). And that raspberry drizzle-girl-that’s what makes this so unique!!!!Thanks again!!!

Hola Miseidy,
Since my daughter loves to bake, we always have some boxes of brownie mix in our pantry. I made the jam from fresh raspberry I had in my fridge….Oh My!! Everyone in the family loved this dessert!! My daughter is now a fan of that raspberry-chocolate combination LOL. The raspberrry flavor reminded me of the piraguas in Puerto Rico……
