This weekend was GORGEOUS! Sunny skies and a comfortable 73 degrees. I apologize to those of you still buried under snow. I’m not trying to rub it in, it’s an unfortunate side effect. On that note…it was freaking awesome this weekend! OB and I ran around town and finished our Saturday with a long hike.
I am not talking some leisurely stroll through the woods. Where OB and I skipped down the trail hand-in-hand while the birds chirped and squirrels gathered nuts. I am talking a full on 4 mile hike up and down rocky hills, with a full hiking backpack while breaking in new hiking boots. I huffed and puffed up that ridge willing my legs to move. OB was kind enough to assist by giving me a little push in the rear. He was probably more concerned about his safety and didn’t want be falling back and taking him down the ridge with me.
After our strenuous hike my man and I had built up an appetite. I opened the refrigerator and sitting on the shelf just off to the right was a head of cauliflower. I remembered I had bought the head of cauliflower a week before with plans to make a cauliflower pizza crust. Cauliflower pizza crust has been on my to-do list for a long time, it was time I give it a go.
It would have been easier to just order a pizza. Heaven knows I wanted to sit down and never stand again, but I also didn’t want to completely destroy all the hard work we had just did. So, I stood on my wobbly tired legs and started my on my first cauliflower pizza crust.
Full disclosure I was skeptical about the entire idea of a cauliflower pizza crust. I mean let’s be honest, making and entire crust out of a vegetable! How can that be possible or good? Well it’s very possible and it crazy good.
The secret to cauliflower crust is cheese, lots of yummy cheese! This makes perfect sense because cheese and cauliflower are besties! Like totally! Feeling whimsical I decided to top the pizza with cheese tortellini. This was a good choice it was a yummy choice! When you first pull it from the oven give it some time to cool before cutting and the slices will hold together. If you are like me, you won’t be able to wait. In that case, you will have to use a fork.
In summation, the cauliflower pizza crust delivered! (See what I did there?) It was cheesy, savory and kind of amazing. Not what I expected. I totally thought I wasn’t going to like it, but I was wrong. And, the real test? OB liked it! The man who believes that all pizza is only real crust, cheese, red sauce and pepperoni. If I got my husband to eat cauliflower pizza crust anyone will.
