Things have been busy this month! I didn’t plan it; it just happened but, isn’t that how it usually happens? Well after a crazy busy week of work and another of life I needed some R & R. Summer is a season of rest and realization after all, and it was about time I take full advantage. There is a community pool where I live and what says summer more than relaxing by the pool with friends?

Lemon Vanilla and PAMA Shaved Ice

Ingredients

1 1/2 cup lemon juice (about 8 - 10 lemons)
1 1/2 cup sugar
1 vanilla bean
zest of 1 lemon
PAMA Liqueur
8 cups shaved ice

Instructions

Combine lemon juice, sugar, vanilla bean and lemon zest in a small pot. Bring to a simmer and stir until sugar dissolves. Set aside to allow the syrup to steep for 5 minutes. Strain the syrup and place in the refrigerator to chill. Divide the shaved ice between 4 tall glasses and pour lemon syrup over each glass. Top each glass with 1 ounce of PAMA liqueur. Enjoy!
