Do you remember that delicious dish I made last night with Ropa Vieja?  Well it made a huge pot of meat, I did use a 3 lb pot roast after all.  Needless to say I had some leftovers.  I thought to myself what the heck am I going to do with all this meat?  Then I remembered these pans I got awhile back, that can mold tortillas into bowls. 

When I got home I heated up the left over beef and put some tortillas into the pans.  I cooked them at 350 degrees for about 10 mins, or till they were toasty.   While they were in the oven I made a pico de gallo salsa.  Once the shells were done I sprinkled shredded cheese in them, laid the beef on top and topped it all off with the pico.  I garnished them with some chopped cilantro and avaocado on the side.  They were super Yum-E and easy!

Here is how I made the pico de gallo.

1/2 onion diced
4 roma tomatoes, diced
1/2 green pepper, diced
2 Tbs fresh squeezed lime juice
3 Tbs cilantro, chopped
1 Tbs red taco sauce
1 tsp garlic powder
Salt & Pepper to taste

Toss all together in a bowl, and serve.

What a great way to use leftovers! And I suppose you could use any oven-proof pan, no matter what the shape? Looks so tasty and refreshing!
