Considering breakfast is my favorite meal of the day it is odd that I don’t really make it very often. Especially during the week. I usually just pour myself some ceral and run out the door.
Last night I though that it would be nice to have a yummy special breakfast so I prepared a strata. The bases of a strata is eggs, bread and cheese, then you build it up from there. This is a perfect dish to make if you need to feed a number of people breakfast. You just throw it together the night before and pop it in the oven first thing in the morning, it is incredibly easy. Yes even you can do it Amber. 😀
I enjoyed the dish. It came out very fluffy and I used a maple sausage which gave it a bit of sweetness. I also cut myself a corner piece which is my favorite because a nice cheesy edge. Mmmmmm….
Sausage and Red Pepper Strata
6 eggs
6 slices of bread
2 cups of milk
2 cups of cheese
1 lb of sausage
3 cloves garlic, sliced
1 shallot, thinly sliced
1/4 cup roasted red pepper, sliced
1/8 cup green onions, dice
Instructions
Butter a 8 x 12 casserole dish, set a side.
Cut the crust off the bread and cut into cubes, set aside.
Cook sausage through, breaking it up into crumbles.
In a bowl beat eggs, milk, salt & pepper together.
Line prepared dish with bread cubes, layer cheese over bread, top with sausage and vegetables, pour egg mixture evenly over everything.
Cover and refrigerate overnight.
In the morning pre-heat oven to 350 degrees. Bake strata for 50 minutes.
Remove from oven allow to cool 10 minutes and serve.
