This is going to be a simple post, a simple stupid post.
Why? You ask.
My neighbor came over with some home grown beefsteak tomatoes. Big beefy tomatoes, guess that is why they call them beefsteak. I had a piece of a watermelon hanging out in the refrigerator, it seemed that a tomato and watermelon salad was in my future.
This salad can’t get any simpler, but just because it’s simple doesn’t mean it’s not delicious.
I initially made this salad just as a snack, with no intention of posting it. But then I thought it would be mean to keep such a thing from you.
So here it is a simple and delicious tomato & watermelon salad. You can have it by its self or as the perfect side dish to some grilled chicken.
Beefsteak Tomato & Watermelon Salad (serves 4)
- 2 beefsteak tomatoes, sliced
- 6 1/2 inch cubed sticks of watermelon
- mint leaves, thinly sliced
- basil leaves, thinly sliced
- feta cheese crumbles
Dressing
- 1/4 cup of sugar
- 1/4 cup of water
- 1 clove garlic
- 4 basil leaves
- 1 sprig of mint
- 2 tbs red wine vinegar
- 1/2 cup oil
- salt to taste
In a small sauce pan combine sugar and water, heat and stir until sugar has disolved. In a blender combine simple syrup and remain ingredients for dressing. Blend until combined and emulsified.
Divided tomato slices and watermelon sticks between four plates, garnish with mint leaves, basil leaves and feta cheese crumbles. Drizzle with dressing and serve.
