I love eggs! I love eggs with a passion! I love all form of eggs, but my favorite egg is an egg with a creamy, runny yolk. This is probably why I am such a fanatic about eggs benedict. I love the runny egg, the tangy hollandaise, and the crispy buttery English muffin it’s practically heaven on a plate. When I order eggs benedict I usually also order a side of hashbrowns, this gave me the idea to make potato cake eggs benedict.
The potato cakes are crispy with crunchy edges and fluffy on the inside. Now I can have my potatoes and benedict too!
