 Today I started working temporarily at Hubby’s office doing reception.  I have a few Noshery fan’s over there who get to enjoy some of my spoils, mainly because I send anything that is unhealthy their way so I don’t eat it.  It’s a secreat conspiricy to foil their wellness plan. ;)

Last night after I came back from dinner with Hubby and Friend I stumbled upon this exchange on Facebook.

Something that tastes that good can’t have calories.

This definatly made me laugh…..I felt so loved.  Although I think deep down inside they only like me for my baked goods.

Initially I wasn’t planning on making anything , but then I stumbled upon this recipe on tastespotting.com.  They were so stinking cute and appropriate, I just had to make them.  At about 9 o’clock at night I ran out to Reasor’s to pick up some butter and mini doughnuts, because I had to have the doughnuts.  I figured it would make a good first impression, you know… bring coffee and doughnuts to work. 

Anyway they were a hit and they are delicious….actually, were delicious because they were devoured in less than 1 hour. 

I would cut the icing recipe in half though because I had a lot of icing left over.  Unless you want to use it again later or make a double batch of cupcakes.  I also ended up with more of a glaze than and icing because I added just a tad more coffee. 

These will definitely be a hit with your boss.  :D

Coffee & Doughnut Cupcakes

Coffee and Doughnut Cupcakes  12 Servings (adapted from Just Jenn Recipes)

Ingredients:
1 stick Can’t Believe it’s Not Butter Baking, softened
1 cup sugar
2 large eggs
1-1/3 cups all-purpose flour
3/4 teaspoons baking powder
pinch of salt
1/2 cup strong brewed coffee
1/8 cup fat free half & half
1/2 teaspoon vanilla

(coffee frosting recipe, below)

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

Cream the butter and sugar until light and fluffy. Add the eggs one at a time.

Whisk together flour, baking powder, and salt in a bowl. Combine the coffee and milk, set aside.

Alternate the flour and the coffee mixture into the butter mixture, beating until combined.

Pour batter into prepared pans. Bake for about 15-20 minutes depending on your oven. Let cool on a wire rack.

The cakes become more coffee-vescent the longer they sit. These make a really nice cake as is. The coffee frosting is just a nice touch.

Coffee Frosting:
1 cup Can’t Believe it’s Not Butter Baking, room temperature
3 cups confectioners’ sugar
2-1/2 Tablespoons coffee
1 Tablespoon fat free half & half (as needed)
1/2 teaspoon vanilla

In the bowl of an electric mixer cream butter, carefully adding the sugar, coffee, and vanilla; mix until light and fluffy. Add a little of the milk at a time to get the right consistency. Turn the mixer up to high and beat well.
