In a few hours the year will come to an end and a new one will begin. For Obed and I this has been a year of change. It was our second year of marriage and it started with a move half way across the country. I was nervous about moving since I had never been anywhere but the East Coast and Puerto Rico. The idea of moving to the Midwest was almost alien to me, but we have come to love it here and have made quite a home.
Most exciting is that this is my first full year as a “food blogger” and it has been a ton of fun! I have had many successes and failures in the kitchen. A few highlights, I had four posts featured on Saveur’s Best of the Web, multiple post featured on Tasty Kitchen, was a featured member on Tasty Kitchen and most important I made many friends across the blogasphere.
I want to thank all of you who come an visit, subscribe to my feed, read my posts and leave comments. I love comments they make me feel warm and fuzzy inside.
In review of my first full year of food blogging I decided to post the 10 most popular post of this year! Woo-hoo!
These toastcups without are the most stumbledupon, most commented and most popular view on my site. Everyday they are at the top of the list averaging 400 views a day. This post was my first post to be featured on Saveur’s Best of the Web.
What boggles my mind is the simplicity of this recipe. No fancy, smansheness just simple bacon, eggs and toast in a cup. If you haven’t tried them I highly recommend you do.
When the snow melts and the temperatures start to rise and summer comes around I think there is no vegetable in more abundance then the zucchini. I had zucchini in almost every shape and form but never got around to trying it in a fritter. These were perfect, soft on in the center and crispy around the edges. The mint gave it a refreshing touch in contrast with the feta and although it is deep fried they are still light enough to enjoy during the summer months.
These skewers were one of the first recipes that I posted and made totally on the fly and they were delicious. I was so proud of myself! The chicken is dredged in coconut milk before it hits the skillet to brown and the glaze is a sweet and spicy combination of pineapple, honey, curry, brown sugar, red pepper and garlic. This makes for a great melding of sweet and spicy. They are a perfect dinner option or can be served as and appetizer.
In the midst of a heat wave Obed and I were dying for something cool and refreshing to enjoy. I reminisced about the days when I was little in Puerto Rico and I would walk down the street to by a cool “limber de coco” or the lady down the street. Since there was no lady down my street here in Tulsa that sold limber, I immediately decided that I had to make some myself.
I have been asked by many to post other version of limber and although I have not done this yet it is on the agenda for Summer ’10. These were also featured on Saveur’s Best of the Web.
One of my favorite restaurants is Bonefish Grill and when I visit I cannot go without ordering their Bang Bang Shrimp. One evening I was experiencing a desperate urge to eat some Bang Bang Shrimp, but I had no desire to venture outside of my home. I did some research on like and found several varying recipes. I took bits and pieces of each and made my own Bang Bang Shrimp. I think these are spot on and they are perfect with some shredded cabbage wrapped up in a tortilla.
At the peak of laziness one evening after a long day at work I made this dish. I will confess that I am shocked that this is in the top 10 because when I made it I was sooooo “whatever”. This dish is tasty and quite comforting. If you are a fried egg fan like we are you will love this one.
During a week long vacation in Florida with family, my mother-in-law suggested that I post a Pastelon. Duh! Why didn’t I think of this sooner?! Pastelon is the Puerto Rican version of lasagna, using sweet plantains in the place of noodles. This is sweet and savory and lick your face good. Out of all the dishes my mom made when I was a kid, this one is one of my favorites!
If you spend some time surfing food blogs you are bound to stumbleupon something interesting. When I stubledupon this recipe I was most definitely intrigued. The post promised that this gnocchi would take 15 minutes from start to finish. I called them a lier but I was wrong! They speak truth! The ricotta based gnocchi is simple to make and comes together with virtually no effort. They are flavorful, light and fluffy and a perfect option for a weeknight dinner.
With the weather as cold as it is right now across the country this a is a soup you should consider giving a try. I found this recipe in one of Martha Stewart’s Everyday Food cookbooks. It is simple to make and warm you at the core. Not only is soup by itself warm, but you add a little spice and you are guaranteed to sweat even if it is 22 degrees outside and snowing. If you are a lightweight when it comes you heat you can adjust it to your liking……pansy. 😀
One evening I was watching Iron Chef and Chef Bobby Flay made what he called zucchini noodles. It wasn’t a pasta made with zucchini, they were literally noodles of zucchini. I thought this was “velly intelesting” and thought that it would be the perfect combination to a slimmed down version of Chicken Parmigiana and I was right, even the spousal figure loved it. If you are looking for a healthier option that is packed with flavor this is one dish that you may want to consider.
