I did a bad bad thing…..I did a bad bad thing….
The state fair is around the corner so I deep fried a peach, topped it with ice cream and drizzled it with honey chipotle sauce. I did a bad bad thing.
I got this idea one day when I tried a cornbread crouton with a peach wedge. I love it when the simplest idea becomes the awesomest dish. This is a crazy simple idea with a big pay off at the end, trust me.
Most important you want a ripe but still firm peach. Slice the peach in halve around the pit and twist to separate. Set up your dredging bowls one with two beaten eggs and the other with your choice of cornbread mix. My favorite cornbread mix is good old Bob’s Red Mill.
Dredge a peach half in the eggs.
Then roll it around in the cornbread mix.
Repeat the dredge, egg then mix.
Fill a heavy pot with enough oil to cover the peach halves. Heat the oil to 350 degrees. Gently lower the peaches into the oil and fry until golden brown, 2-4 minutes.
Using a spider or slotted spoon transfer the peaches to a plate lined with paper towels.
While the peaches combine 1/4 cup of honey, 1 tbs of agave nectar with 1 tsp of chipotle adobo, mix until well combined. If you like a little more heat feel free add some more chipotle.
Now the “pièce de résistance”! Take a peach half cut side up and scoop a heaping helping of vanilla ice cream on top and drizzle with honey chipotle sauce.
If you want to show off the pretty peaches slice them in half. Ooooooh pretty!
I loved this and the genius thing is that you don’t have to serve it as a dessert. You can slice the peach into wedges or chunks, a side of the honey chipotle and serve as an appetizer.
As a dessert it’s a real treat, sweet, crunch, cool and a touch of heat….Holla! I encourage you to deep fry a peach, you will thank me.

- 1 large peach, sliced in half
- 2 eggs
- 1 cup cornbread mix
- peanut or vegetable oil
- 1/4 cup honey
- 1 tbs agave (optional)
- 1 tsp chipotle adobo
- vanilla ice cream
