We tried this last night. SO good. I made a couple of substitutions: chicken breast for thigh (not a fan of dark meat) and parsley for cilantro. I also couldn't add the green salsa or queso fresco since no grocery store in my rural area carries those things. Even though it was a little time consuming, it was really worth it. So much flavor. And we loved the combo of textures. Definitely will make this again.

I am making this right now and my house smells like I hope heaven will smell! I did not have green salsa so I used sofrito instead! Having a great dinner and then off to a mid night showing of New Moon with my daughter!
