These are so good! I noticed the picture has corn in the mixture but the recipe does not have it listed. When I made them, I left the corn out and cooked the mixture a little longer to get some of the moisture out so I was able to flip them. These are wonderful and I make them for all kinds of get togethers. Thanks for the recipe.

What a great way to jazz up your leftovers, I would say these are even worthy of serving to guests. I love how you baked them instead of frying them. Chipoltes in adobo are a new favorite of mine, I am going to have to try your lime mixture next time I make chicken tacos.

Totally appreciate the fact that these are baked and not deep-fried. These flavors are definitely my favorite — southwestern flavors with black beans, corn, avocado, cumin, cilantro. Basically, anything with those ingredients is a winner in my book!
