		<description>These recipes look amazing!  I actually lived in Puerto Rico for awhile and have been looking for a good mofongo recipe. I am not really a shrimp fan so i will probably use chicken or pork instead, but I look forward for trying out the enchiladas and the mofongo recipes. Thanks for posting them.</description>
