I’M BACK BABY! With Apple Pie and a GIVEAWAY!

That’s right I am back and I come bearing a gift.  Sorry I was gone for so long, my computer went on the fritz and it was getting a check up.   Dr. said it had a few viruses and needed some sprucing up.  It is doing much better now.  In celebracion (celebration in Spanish)  I baked a simple apple pie and spruced it up just a bit by using some cookie cutters. 

In celebration of my return to the World Wide Web I come bearing a gift that will assist you in making this pie and any other apple type delight you would like to make. 

Here is my simple apple pie.  Let me apologize in advance for the cruddy lighting, it was getting late so the quality is not so good.

Peel, core and cut 6 apples.  I like to use 3 different types.  Use any 3 you like.  As you peel an cut the apples set them aside in a bowl of cold water and 1 Tbs of lemon juice to keep them from browning until you are ready to use them.

Pretty cool tool huh?  Makes apple delights easy to make.  It is also a pretty handy potato peeler. 

In  large bowl combine the apples with 3/4 cups of sugar.

2 Tbs of flour

2 Tbs of Brown Sugar

1 tsp of cinnamon

1/4 tsp of salt

1/8 tsp of nutmeg

1/2 cup of corsley chopped pecans.

 Also add 1 Tbs of lemon juice.  I forgot to take the picture.  Oops.  Toss all together and coat the apples evenly. 

Now prepare your pie crust by rolling out a pre-made crust (because we know that I don’t do dough all that well) into a pie pan.  Poke the bottom of the crust with a fork about 5 times and trim the crust on the edges.

Now pour your apples into the pie crust.

Take 2 Tbs of butter and cut into about 5 patties.  Place the butter over the apples.

Take another pie crust and your favorite cookie cutter. I chose stars and moons.  Cut shapes out of the crust and place them over the apples, make sure your shapes overlap.  If you run out of crust, collect it, roll it and cut some more shapes out.

Take an egg wash of egg white and 1 Tbs of water, brush over the top crust.

Bake in the oven at 425 degrees for 40 mins.  10 mins. into the baking place a piece of aluminum foil loosely over the pie.

Curt yourself a slice with some vanilla ice cream and dig in!

The cookie cutters make it super easy to spruce up this simple pie and the apple peeler makes it easy as pie to make…..LOL!  Ok maybe not so funny, but maybe you will like this.

My favorite is my grandma’s apple crisp. Lots of apples, sugar, and cinnamon with double the crisp topping… since that’s everyone’s favorite part. No fancy nuts or oats, just a simple grandma recipe. Best warm with vanilla ice cream!

Here is the breakdown.

Simple Apple Pie

6 apples, peeled, cored & sliced
3/4 cups sugar
2 Tbs flour
2 Tbs brown sugar
1 Tbs lemon juice
1 tsp cinnamon
1/4 tsp salt
1/8 tsp nutmeg
1/4 cup pecans, corsley chopped
2 Tbs butter
2 pie crusts

Pre-heat oven at 425 degrees

Combine apples, sugar, flour, brown sugar, lemon juice, cinnamon, salt, nutmeg and pecan into a large bowl. Combine well, until apples are evenly coated.

Roll crust out into a 9 inch pie pan, puncture bottom 5 times with fork and trim the edges.

Pour apple mixture into pan.

Using cookie cutter of choice, cut shapes out of 2nd pie crust and place over-laping on apples. Collect crust trimings and roll out to cut more shapes.

Brush top crust with egg wash.

Bake for 40 minutes. 10 minutes into the baking place a piece of aluminum loosely over the pie.

My favorite is my dad’s. He always added lots of spiced rum to his apple mixture. He’s gone now, and darned if he never wrote out his recipe! I have tried but always end up with a sloppy wet pie, and he never did!

What a lovely and no doubts tasty pie! My all time favorite, an oldie apple pie… Definetely, baking this next saturday and bringing to a picnic with closest friends.
And of course, who would be able to say no for this adorable apple peeler?? Even though, I don’t have any luck for wining free stuff or lotteries… ;)

I love black berry apple cobbler. I normally serve it with cinnamon ice cream. It is so delicious. I would love the peeler corer, this fall would be a lot simpler.

Well, you pretty much hit it on the nose … apple pie is my favorite apple dessert. I’ve never tried it with pecans though, so I’m definitely going to have to make your recipe!

Currently my favorite desserts are summery fruit tarts. During the fall & winter I crave carmel apple pies or pumpkin.

Your top crust is so clever & cute. I never think to do anything creative like that when I’m making pies. Probably because I’m so worn out from peeling apples. ;o}

My Dad belonged to a 19th century reenactment group and when they camped out, it was done “mountain man” style; everything was cooked over a wood fire in cast iron pots and pans! NO modern amenities! Below are a combination of recipes that the women of the group used as a dessert sauce at the pot latch dinners.

Apple Jacks forms of this recipe have been dated back to G. Washington’s era!)

1 bottle Captain Jack’s Rum
1 gallon apple cider (store bought or for those more adventurous, home made!)
several cinnamon sticks

combine all in a capped jug ….all mountain men had jugs! lol
let sit at least 24 hours. Will keep several days…if it makes it that long!
This drink REALLY packs a wallop!

Apple Jacks Sauce (can be served over baked apples, apple crisp, pound cake, ice cream…just about anything!!)

2 cups apple jacks
2 teaspoons cornstarch
4 teaspoons water
1 tablespoon butter

Boil apple jacks in a small heavy saucepan over high heat until reduced to 1 cup, 15 to 20 minutes. Mix cornstarch and water; add to the cider and cook, stirring, until slightly thickened, about 1 minute. Remove from heat and add in butter until melted.

My mom makes the BEST jewish apple cake! I don’t know what makes it jewish, but it’s sweet and moist and spongey and the apples are just firm enough, sprinkled with some powdered sugar, uh! So good!

My favorite is an apple crisp with oatmeal, brown sugar, flour, butter on top of apples with cinnamon and sugar. When done add ice cream and caramel sauce.

I love apple crisp!

But i think my fave is apple pie… but i never make it cause for some reason, whenever i make pie, it always ends up very juicy and the juice spills in my oven and then it makes a really big mess… So i just end up buying it but storebought pie isn’t as good as homemade.

It’s got to be Apple Strudel by far. I haven’t made it in a hundred years because I can’t get hold of the puff pastry and I’m surely not making THAT myself! I’ve thought about making an apple pie every year for the last five (5) years but am too lazy to peel and core the apples. Sad, I know.
